Food trucks unite for Curbside Cuisine

Sandy Vanderstoep, with Garden of the Gods Gourmet, has joined forces with some local urban developers to bring us Curbside Cuisine Colorado Springs.

“The food cart project has morphed into Curbside Cuisine CS,” she said when I reminded her that she had told me about the project several months ago. “Excitement is building at the prospect of taking action to change downtown Colorado Springs. To date we have created the concept, tested the vendor interest, lined up a spot on Tejon between 7-Eleven and People’s National Bank.”

A June 8 launch date is the target for getting the project rolling (sorry) with a collection of food trailers, trucks and carts in the parking lot between 7-Eleven and the bank. Expect to see a limited outdoor seating area where food will be served daily for breakfast, lunch and dinner year ‘round.

“We’ve had inquires from about 12 vendors,” she said. “We will start with four: El Padrino, Bundt Appetit, Nourish Organic Juice and Coffee Merchants”
