Lydia Martinez and her mother opened Vallejo's Restaurant, 111 S. Corona St. March 17, 1962. Although Lydia is still in the kitchen cooking her mother's recipes she is training son, Phil, so he can carry on the family run business when she decides it's time to hang up the apron.
It's been their tradition to feature their famous green chili enchiladas with sour cream on the menu for anniversary days. They will be offering customers free pieces of cake.
